Varietal – H1
Growing Altitude – 1,100 – 1,200 MASL (metres above sea level)
Natural process coffee involves drying coffee cherries on raised beds in the sun. To prevent the cherries from spoiling, they are raked and turned throughout the day and then covered at night or during rain storms. This is the more traditional method of processing coffee. After the cherries have been dried to the required level, they are sent to mills to separate the seeds from the rest of the dried fruit, otherwise known as being “hulled.”
Tasting Notes – Winey, Plum, Syrupy
Honey process is quite a popular process in Central American coffee-growing countries. During this process, coffee is dried with some or all of the mucilage remaining on the parchment encasing the seed. Coffee cherries are picked, sorted, depulped, and then moved to raised drying beds. Some fermentation happens in the short amount of time it takes for the mucilage to dry. Honey process coffees feature significantly less acidity than washed or natural processed coffees.
