Terbo Drinks #1: Chilled Festive Espresso Eggnog

Serves 4

Ingredients:

Custard Base:

2 cups milk
1 cup cream
1 cinnamon stick
3 cardamom pods
1 vanilla pod
½ teaspoon grated nutmeg
2 double shots of espresso (120ml)
60g brown sugar
3 eggs, separated
100ml bourbon whiskey or good brandy

You will also need ice, 4 tall glasses and grated nutmeg to garnish

Method:

Place the milk, cream, cinnamon, cardamom and vanilla into a pot
Heat on medium heat until just coming to the boil
Remove from the heat and allow the spices to steep for a few minutes
In another bowl, whisk the egg yolks and sugar until pale and thick over a double boiler
Pour the flavoured cream mixture over the eggs and sugar and mix well
Add the alcohol of your choice as well as the espresso
Allow to chill

To serve:

Whisk the egg whites and fold them into the custard
Pour the custard over ice in tall glasses and garnish with a grating of nutmeg
